Chef’s Overview
Dear Chefs, not every outdoor gathering needs burgers, hot dogs, and someone standing over a grill for three hours. Sometimes the best entertaining recipes are the ones that feel a little elevated while remaining surprisingly easy to pull together. Chicken Florentine checks every box. Tender chicken, a creamy spinach sauce, garlic, parmesan, and just enough elegance to make guests think you worked harder than you actually did. Today, we're making a Chicken Florentine that feels right at home on a patio dinner table, backyard gathering, or any warm evening when comfort food sounds better than another round of cookout classics.

Ingredient List
For the Chicken
- 4 chicken thighs
- 1 teaspoon kosher salt
- ½ teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 2 tablespoons olive oil
For the Florentine Sauce
- 2 tablespoons butter
- 4 garlic cloves, minced
- 3 cups fresh spinach
- 1 cup heavy cream
- ½ cup chicken broth
- ¾ cup grated parmesan cheese
- ½ teaspoon kosher salt
- ¼ teaspoon black pepper
- ¼ teaspoon crushed red pepper flakes (optional)
For Serving
- Fresh parsley
- Lemon wedges
- Crusty bread
- Roasted potatoes
- Steamed vegetables
Step-by-Step Recipe
Step 1: Prepare the Chicken
Pat the chicken thighs dry with paper towels. If needed, lightly pound thicker portions so the chicken cooks evenly. Season both sides with the salt, pepper, garlic powder, and paprika.
Step 2: Prep the Garlic
Finely mince the garlic cloves and set them aside. The 5" VG-10 Damascus Petty Knife is perfect for this kind of prep work because the compact blade provides excellent control when working with smaller ingredients.
Step 3: Heat the Pan
Place a large skillet over medium-high heat and add the olive oil. Allow the oil to heat until it begins to shimmer.
Step 4: Sear the Chicken
Add the chicken thighs to the skillet and cook for 5 to 6 minutes per side until golden brown. The goal here is to develop color and flavor while creating the foundation for the sauce.
Step 5: Remove and Rest the Chicken
Transfer the chicken to a plate and set it aside. Don't worry if it's not fully cooked yet—it will finish cooking later in the sauce.
Step 6: Build the Florentine Base
Reduce the heat to medium and add the butter to the same skillet. Once melted, add the garlic and cook for about 30 seconds until fragrant.
Step 7: Add the Spinach
Stir the spinach into the skillet and cook until wilted. It may look like a lot at first, but the spinach will reduce significantly as it cooks.
Step 8: Create the Sauce
Pour in the chicken broth and heavy cream, stirring to combine. Scrape any browned bits from the bottom of the pan because that's where a lot of flavor lives.
Step 9: Finish the Florentine Sauce
Add the parmesan cheese, salt, black pepper, and red pepper flakes if using. Stir until the cheese melts completely and the sauce becomes smooth and creamy.
Step 10: Return the Chicken
Nestle the chicken thighs back into the skillet. Spoon some of the sauce over each piece so the flavors begin coming together.
Step 11: Simmer Until Fully Cooked
Reduce the heat to low and simmer for 5 to 7 minutes, or until the chicken reaches an internal temperature of 165°F and the sauce has slightly thickened.
Step 12: Garnish and Serve
Finish with fresh parsley and lemon wedges. Serve alongside roasted potatoes, steamed vegetables, or crusty bread. If you're building an outdoor dinner menu, Spanish Tortilla That Deserves More Than Breakfast pairs beautifully with Chicken Florentine because both dishes can be prepared ahead of time and served comfortably outside.
When Comfort Food Meets Patio Season
Chicken Florentine proves that outdoor entertaining doesn't always need to revolve around burgers, steaks, or hours spent managing a grill. The creamy spinach sauce, tender chicken, and parmesan bring plenty of comfort to the table while still feeling light enough for a warm evening outdoors. It's a recipe that looks impressive, comes together without much stress, and pairs easily with everything from roasted vegetables to a simple salad. When good ingredients are treated well, entertaining becomes a lot more enjoyable. Sometimes that's exactly what summer dinners need.
